I’m thrilled to be back at the blog, and I will be putting out a new holiday recipe each week as we approach and get through the holidays. Nothing says this season for holiday baking like this one. Very popular this fall at the resort are the Caramel Apple Cookies. We call them ‘Lobby Cookies’ around the resort, because you can always find a full platter of them in the resort lobby at the front desk.
Here’s the low down on our Lobby Cookies!
- 1 Cup Softened Butter
- 1 Cup Sugar
- 6 oz softened Cream Cheese
- 1 egg+1 yolk
- 3 Cups Flour
- 2/3 tsp Baking Powder
- 1/2 cup sugar
- 3/4 Tbsp Cinnamon
- 1 cups sliced apples
- 3 cup sugar
- 1 tsp lime juice
- 3/4 Tbsp Butter
- 1/2 tsp Cinnamon
Mix all the apple filling ingredients together in a sauce pan and cook just until the butter is melted.
Blend butter, sugar, and cream cheese until well blended. Beat in eggs. Combine dry and wet ingredients until well blended. Scoop the cookies with either yellow or black scoop or roll in the rolling sugar. Make a thumbprint in the center, almost until your thumb touches the pan underneath. Fill the cavity with the apple filling
Bake at 350 for 8-10 minutes until lightly browned.
While they are cooling melt caramel and drop a half teaspoon onto each cookie. Using a fork flick, carefully splatter the vanilla dipping frosting across the top. Let cool.
